What's wrong with the rubber sheets and gerbils? I always took it to mean that his kids were bed wetters and that they had gerbils…reinforcing that they are the worse guests you could have in your house.

Ironically, there was a bed wetting scene that was cut; but I'm betting it was no accident Randy delivered the line the way he does and they cut the scene.

I thought that when I was younger but I really think the Eddie in this version is much cleaner than the vacation Eddie. All around it's a cleaner movie. I really think it was a reference to their kids pissing in the Griswold's beds.
watching it currently and after paying attention during this scene, it all makes sense now.
Eddie says/asks if the kids could stay in the home, because him and wife hadn't had any alone time in a while. Grandpa and Beverly both agree 'there's plenty of room', so kids are invited to sleep inside.
So now Eddie is giddy and excited that he'll get to be alone with wife in the rv. So he has that excited tone in his voice while saying to wife to get rubber sheets and gerbils; in other words let's get the kids stuff out of rv so we can be alone.
Coincidentally, home alone 2; the uncle walks by fuller chugging a coke, and grabs it while saying 'easy on the fluids pal, the rubber sheets are already packed'
So again connecting rubber sheets to bedwetting, and not some weird fetish.
Call me enlightened.
