Anyone have a solid recipe? I'm signed up to make soup for my kid's school for teacher appreciation. Everyone else is making a hot soup, or chili, but it's gonna be 90 degrees next week, so I figured I would make a cold offering.

You need good tomatoes to pull this off. Roma tomatoes from HEB won't cut it. If you can find tomatoes from a local farmers market, use those.
