I have a Meater which is decent. It has some connection issues and doesn't work very far away from its charging station. The probe is also pretty thick which can make finding a suitable place to insert it challenging with thinner cuts.
I upgraded to the Combustion probe which I have not used yet.
Had a Meater, liked it, but imo if you want the best of the best, get the new Thermoworks RFX, everything about it is better. Thermoworks in general is the gold standard for food temp instruments.
I have a Signals also, and its great too, but OP was asking for wireless, and the RFX from thermoworks is just an awesome tool, and imo much better than the Meater
For the Meater losing connectivity when you walk away you can use an old phone or ipad as a bridge. Connect the Meater to that device and keep it close enough to maintain the Bluetooth connection. If the device is on the internet you can then monitor on your phone from anywhere you have cell coverage.
I have two Meaters and when I close my Traeger they lose connectivity to the wooden box - 85% of the time the green light starts blinking red once the lid is closed for a minute. Is there some magic trick to that not happening? They work fine with meats in the oven but not the Traeger.
