I'm wanting to try this, or stuff them inside bacon wrapped chicken thighs. Will smoking them soften the papery skin enough?

Probably, I roasted some the other night just using the broiler/oven because i was lazy and chopped one up without peeling etc so i could throw it in a pile of cheesy grits. No issues with the skin whatsoever.
