Eggplant, sausage, and tomato gratin, with bow ties with pesto. I've made this gratin about half a dozen different ways, changing out proteins and seasonings. I don't really have a recipe for it except that it has a pound of mild Italian sausage, a tomato sauce made with a can of DOP San Marzano tomatoes, two roasted eggplant that are then peeled and chopped, panko breadcrumbs, and parmesean cheese. Layer everything and bake it at 375 for an hour or until the internal temperature is 150.

Weird one for this thread, but roasted some hatch chiles and made some sausage with monterey jack cheese. Cold smoked today and excited to give it a try in next couple days.

Wife went grocery shopping while I was camping this weekend. She bought some bone-in pork butt steaks. ~3/4 inch thick cut across the scapula.

I got out my disk, propane burner, and mallet and made schnitzel, rice, bacon gravy (with homemade beef bacon), and fried zucchini. Beef tallow for the fry oil.

Ham and Gruyere crepes with arugula salad, and salted butter caramel tart. Anyone that says you have to make crepes in a nonstick pan or carbon steel is full of it. A very clean stainless steel pan and a very thin film of butter will work.
