We went there in March of 2022 and stayed at the East Bay Resort, which was bought out by Marriott and renovated to become the Salterra Resort. We were there to scuba dive and I would say the diving was marginal mainly because the resort and all of the dive sites are on the windward side of the island. The tradewinds blow pretty steady at 15-20 kts most of the time so it can be a bit breezy and the sea conditions were not ideal for diving. They also did fishing charters, snorkeling trips, sea kayaking, island tours etc. back then and I assume they still do now. It is a great place for bone fishing as the Caicos Bank is on the lee side of the island and has miles and miles of water that isn't much more than about chest deep. They have a long sandy beach that is pretty much empty except for people from the resort and easy access to the old salt ponds if you want to go watch flamingos.
The hotel itself was very nice back then and should be even better now (especially for the rates Marriott wants). They made a major upgrade to the pool area as part of the renovation, and I believe they expanded the spa and added restaurant options. Perhaps one of the best things they did was arrange for non-stop flights from Miami to South Caicos so that you don't have to go through Provo to get there. Going through the Provo airport was a nightmare and the main airline flying to South Caicos back then was Intercaribbean. DO NOT FLY Intercaribbean! I can't emphasize that enough. Take the flight from Miami to South Caicos or get the private charter from Provo if you have to...or Caicos Express. But do not fly Intercaribbean.
I think the only other resort is Sail Rock and it is on the north end of the island. We visited it as part of an island tour and my impression was that it was more setup as a bunch of luxury beach homes high on the hill without great access to the beach on the east side of the island. They had a beach bar on the leeward side that was a little bit of a drive from the resort. It was nice, but was VERY hot when we were there because it is completely sheltered from the wind. Not sure if they have developed the golf course on the island yet, but it was one of the things being talked about when we were there in 2022.
