Ah, ok. Yeah. The main obstacle between Spain and Portugal for the most part is a river you cross a bridge over.

Palma, Ibiza, Barcelona. My vote is for Spain. I lived there for two years and that was probably the best time of my life so far. I worked online at that time, communicating with the customers through microsoft teams whatsapp and seeing my boss only on the screen of my laptop once in a while. The life changed a lot since then and i need to go to those places again one day and show them to my child.

Looking it up now it seems you may have to do a checkpoint if you cross over via the super small country of Andorra which is not a Schengen country, but otherwise, if you are going straight from Spain to France, no checkpoint.
I crossed in Andorra a few years back. Don't remember having to stop. They just did the usual checking of passport at accommodation. It's a nice spot but not something you need to go out of your way to do.

Nazare is also a nice place to stop if you drive Lisbon to Porto. The view from the area above town is pretty cool overlooking the big beach area. As previously mentioned, if you are there to see waves you need to camp out for a bit.
