I am an older guy and cannot cope with all of this AI stuff. I'd like to roll back to my previous office installation. I have tried all sorts of online help from MS - no solutions easy enough for me to deal with.

Rolling back 365 is going to be a PITA if you aren't tech savvy.

Copilot is their AI assistant. It looks like you have to disable it by app. You should be able to go to settings winning each app and find the toggle for enabling CoPilot and turn it off.

You can completely remove it by tweaking the registry but I would stay away from that.

A somewhat nuclear option, but needing less tech savvy, is to switch to a free open source office suite like LibreOffice or use GoogleDocs(no idea if they're integrating Gemini into that or not as i rarely use it)

They occasionally have ads from USA Today newspaper with downloadable MS Office 2021 and 2019 versions for about $40. I bought two a few months ago and they work fine.

Currently they are Sold Out. But that ad comes around periodically.

You can buy keys for $10-$15 online, I've never had one that didn't work.
