So I got this at Costco the other day and it was labeled wagyu brisket but it looks more like a skirt steak to me. In the package, it was folded over so was thicker, and it was only $17 so I figured what the hell. Thought it might be just the flat. Took it out and unfolded and for the life of me, I cannot imagine this is the flat of a brisket. This is skirt steak, right?? ?

definitely weird and looks exactly like what you said. either way, looking at the intramuscular fat, looks like a pretty nice piece of meat for $17.

Skirt or a flatiron steak. It almost looks like a Denver steak.

Looks like a flatiron shape and grain but it's too big for a flat iron.

Whatever it is, cook and slice it like a flatiron and it will be delicious.

It doesn't look like brisket to me since there's no fat cap anywhere, they sell flats and it doesn't look like them. It also doesn't look fatty enough to be any cut of wagyu, but that's an assumption based on what the steaks look like since I've never seen a wagyu brisket. I would say it looks most like flank steak to because Costco always sells their flank steaks folded over and in that general shape.

It most resembles a flank steak. Also, my brother in Christ, spray down that cutting board with some bleach please.

Ha, I wondered if I'd get a comment on the cutting board. That's an OLD board that I almost never use and is stained like crazy. Wife had just used it to cut some veggies and it was out when I was getting ready to vacuum seal some fish and this cut. I have a wood board I use 99% of the time. Thanks for all the responses. I figured that was the case, but since I have never bought a Wagyu brisket flat, figured it was worth checking. I'll cook as a flank or flat iron and should be a great bang for the buck cut.

Oof. I have a meat cutting board and a separate veggie cutting board.

I've cooked dozens of skirts in my life and that's not a skirt. If I had to guess, it's a flank.

That looks nothing like skirt steak. My money's on flank

I agree with Bruce and Fido. That is not a skirt. I also think it's a flank.

The muscle grain is running the wrong direction for skirt steak.

Well marbled flank steak, not sure if actually Wagyu, probably is, but sear that sucker off and enjoy a good cut of meat.

Only way to truly know if it's a brisket is to smoke it for 12 hours and report back.
