Homemade flour tortillas

Anyone have a favorite recipe? I searched but didn't find one posted before. I made them for the first time last night and they were good but there's definitely room for improvement.

Depending on any particular recipe you settle on I've just got a few pieces of advice.

1 - The fat matters. Whether you decide on butter, lard, tallow, bacon grease, or some other fat it will have a big impact on the flavor of the tortillas.
2 - How fluffy do you like your tortillas? The biggest variance I've seen in tortilla recipes is how much baking powder is used. I like a thinner tortilla so I generally stick with about a half teaspoon of baking powder in a standard batch.
3 - Tortilla presses are a great tool. I have a cast iron one and it was a good purchase because it's the easiest way to assure consistent tortillas. You can make them without one, but it's a lot easier if you have one.

My wife got into making sourdough bread and then she tried making flour tortillas with some of the dough…..They turned out awesome! Actually some of the best tortillas I've had…

Yeah, I rolled my first batch out with a rolling pin. We had some very unusual shapes. The kids laughed. I laughed, but they were good.

Also the flour matters as well. Big difference between the hard red flour that you buy at the grocery store that most all purpose flour is made from and the softer Mexican Sonoran flour makes, IMO a far better tortilla than using all purpose flour.

Also, no baking powder - water, flour, fat, salt is all it takes. I typically use a mix of smoked beef tallow and butter. Have also used bacon fat/lard and pure butter as well. All create unique and awesome flavors.

I like using bread flour instead of all purpose.

I don't typically use baking powder either. No baking powder tends to yield tortillas similar in texture/chew to most mom & pop Mexican restaurants. This is not me saying my tortillas are as good. Just that they are similar. But I have made some using baking powder and they were good, more similar in texture/chew to store bought.

Eff using a rolling pin. Get a cheap cast iron tortilla press from HEB or Walmart and cut a gallon sized ziplock bag open.

I got the Masienda press and it's worth every penny over cheap cast iron. The smooth enameled surface is night and day better for pressing tortillas
