B183 beans recipe scaled to 120 people with some catering shortcuts to avoid mountains of chop prep.

Ingredients:
8 (108 to 110 oz) cans pinto beans, #10 size (big cans)
6 pounds bacon, chopped
4 large onions, finely diced
3 heaping tablespoons garlic, minced
2 (32 oz) bottles Clamato (CLAMATO CONTAINS SHELLFISH.) Sub v8 or tomato juice instead
3 (28 oz) cans diced tomatoes, drained
3-4 serrano peppers, halved
4-5 jalapeno peppers, halved
6 to 7 bunches fresh cilantro, yielding about 6 cups chopped, divided
1/2 cup onion powder
1/4 cup garlic powder
1/4 cup Knorr chicken bouillon powder
2 tablespoons smoked paprika (optional)

Directions:
Cook the bacon in large pots or a tilt skillet until browned and the fat has rendered. Remove the bacon and set aside. Leave all the bacon fat in the pot. Add oil or lard only if extra fat is needed.

Add the diced onions to the hot bacon fat and cook until softened and lightly golden.

Add the minced garlic and cook 2 to 4 minutes, stirring to avoid burning.

Add the onion powder, garlic powder, smoked paprika if using, and Knorr bouillon powder. Stir and cook 2 minutes to bloom the flavors.

Add the serrano and jalapeno halves and the drained tomatoes. Cook 5 minutes to soften the peppers.

Add all the pinto beans with their liquid from the 8 (108 to 110 oz) cans, the 2 (32 oz) bottles of Clamato, and the cooked bacon. Stir very well to incorporate the fat and seasonings evenly.

Bring to a boil, then reduce heat and simmer 45 to 60 minutes, stirring often.

Add 3 cups of the chopped cilantro halfway through the simmer and add the remaining 3 cups right before serving.

Taste and adjust seasoning and ingredients

I advise against the Clamato unless you know none of the 120 people have shellfish allergies.

You can use V8 or Campbells Concentrate tomato juice.

I'll second this. We used B's recipe for daughter's wedding bout 6-8 years ago. Easy and always a big hit. And if you are really short on time, just add Herdez salsa to the bush beans. Obviously not as good but will do in a pinch or when I feel lazy.
Seafood allergies is a good point. At wedding we had 2 pots of beans with sign that warned for seafood allergies for one. Wife wanted just one pot with no Clamato but I could not comply….. just better with Clamato

Not sure what cilantro and shellfish allergies have to do with each other, but I can't imagine this recipe without cilantro. Edit: I misread Clamato as cilantro. I do understand some people have a weird condition where cilantro tastes like soap though, so maybe have a bowl of it and encourage people to add it?

I made that recipe for the first time a couple months ago. They were great! The wife and her Mom agreed they were the best ever.
I am not the Six Million Dollar Man, but I might need that surgery. "We have the technology, we can rebuild him!"

Clams wouldn't trigger a shellfish allergy. There are some people allergic to clams(mollusks) and some people that are allergic to shellfish(shrimp, lobster, etc.) Triggered by two different allergies. Someone could be allergic to both, but being allergic to one doesn't automatically mean you're allergic to the other.

Allergy concerns none the less, but just wanted to clarify as most people don't know there is a difference.

As have I, and I throw my cast iron pot open top on the smoker for another layer of flavor.

Spicy V8 in place of the clamato also is a hit.

Ought to throw a little chili in the pot too.....make them perfect......I know it's a cardinal sin to put beans in chili but nobody ever said nothin about puttin chili in the beans...

If you're making the B-183 beans ditch the Clamato and use Zing Zang

It's got more flavor depth and the thicker consistency is better IMO.

Here's the original recipe from B1-83 if you want it.


1 large onion, coarsly chopped
2 medium tomatoes, coarsly chopped
4 serrano peppers, finely chopped (w/seeds)
1 cup cilantro, finely chopped
2 cups "Clamato" juice
2 large cans Bush's pinto beans
6 strips of bacon
1 Tbs oil (or lard)

Cook onion in hot oil (lard) until just getting soft. Add bacon.
When bacon just starts to brown, add beans and all remaining ingredients.
Bring to boil and simmer 45 minutes.
