I've got a 1300 sf metal building and trying to decide how to heat and cool it. It's insulated and doubles as a gym/entertainment area in addition to workshop.

Any reason to go window unit over mini split? Window units are cheaper and easier to install.

Fiberglass batt/blanket with a pretty high R value. Like the picture below. My shops smaller than that but has a bigger door (also insulated).

Just put an AC unit in for it. I would run one with a heat pump so as to not mess with gas/propane hook up unless readily available.

Install a large mini split. Calculate the size by accounting for the extra volume.

Would be easy to plumb the connections through the wall with the ~4" hole.

mini split will be a lot quieter and more efficient.

Mount the outside unit on the ground or not attached to the building. If mounted to the building, it'll rattle the walls when running.

Hopefully you've got a standard size door in addition to the overhead door. Otherwise you'll lose a fair amount of treated air each time you come in and out. It's going to be tough to heat with that high ceiling.
