I have a 12x16 outdoor shed that I would like to put LVP wood flooring down in. It currently has a plywood floor, I run a window a/c unit in it, and it is elevated 6-12". Besides laying down a moisture barrier, is there anything I need to do or know?

Shouldn't be any issues with that. In fact, I'm about to do the same thing. Running your planks parallel to the 16' side will result in fewer cuts.

Thanks for the reply. Thoughts on cutting the tongue portion off on the side that butts up to the wall, or just get it snug and put like quarter round moulding?

Technically speaking, almost all installation instructions say to leave a 1/4" expansion gap around the edges. If you expect a lot of temperature variation, take that into consideration. I'd probably cut the tongue off just for good measure, but mostly because I prefer shoe mould over quarter round.

With a floating LVP, you will definitely want to leave a gap per specs around the perimeter. I've seen a few floors buckle due to installer error.
