How long do you want to ignore this user?
About to buy tickets to Edinburgh and my adult son is thinking about flying to Prague for an additional 3 or 4 days.

So does he buy a round trip to Edinburgh for the dates he thinks he wants to come back and then do a round trip to Prague from Edinburgh and then if he decided not to go just change his return flight from Edinburgh? Is that the correct thinking?

Not sure what you are asking on the very last part. "If he doesn't go, change Edinburgh flight".

If he did roundtrip to Edinburgh, and then roundtrip to Prague, why would he need to change the EDI?

Who is the carrier? I think that also matters if you are going to try and change things.

If three days in he decides not to do the side trip to Prague and decides to fly back with us, then he just has to try and change the Edinburgh flight.

Gotcha.
Yes, you can change the flight, just know that there may be a cost involved if there is a fare increase, which is likely being so close to travel.

What I don't know (maybe someone can answer), is I feel like you can change the flight within the 24 hours before travel for free now. I could be wrong, but I feel like they did that when they moved to the no change fees.

But if you do that, I would see what the cost is to fly home from Prague then and not roundtrip before you made the decision.

Not really any options (that I'm aware of) to fly nonstop from Prague back to most of CONUS. So he's connecting somewhere if he chooses to make Prague his final destination in Europe.

Without overly confusing things and running the risk of carrier issues, book the RT to and from Edinburgh.

Have him use a cheap euro airline to RT Edinburgh to Prague and back. Multi-city destination trips can usually get very expensive because not all carriers hub from those different euro cities.

What choppin said. Super cheap to fly between countries once you're over there. The only thing would be, he would have to go through customs/immigration an extra time coming back to Edinburgh.
