The only AI places I have been (Palace resorts years ago) were not great. Food average and booze was cheap.

Are there places in Carribean where the liquor is good and the food is decent? I'd prefer to go out to dinner off property, but if I could have a decent breakfast/lunch (prefer ala carte and not buffet) and could have some beach drinks that are made with decent liquor, I might consider an AI place.

But, I feel like they are cruise ships on land and that's not my personal travel preference.

Anyone had good experiences that would be worth considering? I know it is not going to be the Four Seasons or Rosewood quality, but something like a good Westin level resort?

Agree with JMac03 -- Le Blanc, La Casa del la Playa (with Hotel Xcaret), Grand Velas, Unico
Some of the Secrets can be more luxury level, but not all of them.

I really like Los Cabos if you're good with going off resort for dinners - great AI options and non-AI and some amazing restaurants like Acre, Flora Farms, Sunset Monalisa, etc... The JW Marriott there is really nice and close to San Jose del Cabo for great restaurants and shopping.

Grand Velas Boutique in Los Cabos is brand new and is adults-only, all-inclusive. Keep in mind since it is so new they'll be working out kinks still, I'm not even sure the spa was open yet.

Casa Velas in Puerto Vallarta is an adults only, all-inclusive option that I really like there. But, not beachfront, they have shuttle to beach area they share with Velas Vallarta.

There is a section at the Riviera Maya one that is but some restaurants will be at the family friendly sections.

As Breeze mentioned, there is a brand new boutique GV in Cabo that is adults-only next door to the family friendly one. Same concept, I think some meals will be next door.
