VT and NH this weekend

My wife and I are heading to southern VT this weekend for our 25th anniversary. Any suggestions would be appreciated.

Tentative itinerary:

Friday - land in Hartford, CT at 5 PM. We'll drive up to Vernon, VT which is the southeast corner of VT. We'll find dinner somewhere between Hartford and Vernon.

Saturday - we'll drive north. Might go Route 100, might go a different way. Could get as far as Montpelier or Stowe. Hoping to find a cider donut on the way. Also hoping for covered bridges, quaint small towns and maybe a pumpkin farm. No specific destination or activities. Any recommendations? At some point, we'll head south back to Vernon.

Sunday - we'll head southwest to Stockbridge, MA to attend Mass at the National Shrine of the Divine Mercy in the morning. Then we'll head west to Catskill for a 3:15 foliage train ride. We should have some time to kill in between. Might spend that time in Stockbridge, Hudson or Albany. We'll be free after the train ride is over at 4:45 and will head back to Vernon, VT. Open to ideas of anything in the Albany area or along the way back to Vernon.

Monday - we'll head east into NH, maybe to Keene, could go as far as Manchester. Open to anything, but we have to head south by around noon to drop the rental car at the airport in Hartford, CT at 3 PM

My wife has stated that her goals are to see leaves, drink coffee and eat soup. She's not high maintenance.

If you have any input, I'd be appreciative.

Was just in southern New Hampshire this past weekend visiting my brother. Leaves are pretty decent at the moment. Hollis is a cute little town with some pumpkin/apple farms, but they will certainly be crowded during the weekend. Good amount of little cafes/diners/restaurants in town. We ate breakfast at Parker's Maple Barn in Mason. Rustic lodge kind of setting surrounded by lots of trees and a brook. Enjoy the trip, it's such a beautiful area!!

Also, they attend St Stanislaus Catholic Church in Nashua. Very beautiful inside and they do a latin mass. Just mentioning because you talked about the Shrine of Divine Mercy.

I really enjoyed Burlington, VT but if you're not going that far, try Lui Lui wood fired pizza in West Lebanon, NH.
