I booked us to go out of Galveston this July

Hits Key West, Freeport, Half Moon Caye, and Nassau.

Excursions are hard to figure out - anyone have any recommendations as well as things not to do?

I have a cruise that hits Key West this December and booked Lloyd's Bike Tour. Not a cruise line excursion but someone on this board recommended it and it looks like fun to me. Search for "Key West" for other recs from this board.

In Freeport, catch a taxi to Deadman's Reef (our driver took a nap in the car while we snorkeled).

If you like snorkeling, the water is crystal clear and full of aquatic life. Swam among many sea turtles, saw countless varieties of fish. Even saw a few barracuda (juvenile - the bigger ones are in deeper water).

There is a snack bar for drinks and light fare - don't recall if they had a grill or not.

There wasn't an "official" boat excursion for this spot, but it was well worth the 15-20 minute trip. As I recall, we were in Freeport for a good while, so time wasn't an issue.

Stuart's Cove in the Bahamas has some great snorkling/diving to see sharks.
