Late night layover in Las Vegas, dinner recs?

Curious what the boards thoughts are, my self and 2 coworkers are landing in Vegas around 9:15pm on a Thursday and don't fly out until 1am.

With this time I figured we would go grab a solid dinner, what recommendations would y'all have?

To be clear, you have about 3:45 to deplane, get out of the airport, get to a restaurant, eat, and get back thru security to board? At night?

That's tough. I say Tacos El Gordo but the line might long at that time. Lotus of Siam closes at 10:00. If they'd take a 9:45 reservation, I choose it. It's off strip so less time in traffic
